1. Mix egg with egg white in a bowl with a fork or whisk. Set aside.
2. Heat skillet on medium heat.
3. Add 2 Tbsp water to pan.
4. Add bell pepper. Roast bell pepper until peppers appear bright and soft.
5. Once desired texture of vegetables is accomplished, add coconut oil to skillet.
6. Add egg mixture.
7. Cook eggs until fluffy.
8. Add pico de gallo.
9. Enjoy!
