First, the chicken:
1. Preheat the oven to 400°F.
2. Mix all dry ingredients together in dense bowl
3. Brush coconut oil onto chicken tender.
4. Roll your oiled chicken in the breading, & lay them out on a baking sheet lined with parchment paper.
5. Sprinkle leftover crumb for extra crunch.
6. Bake for 20-25 minutes, until crumbs are golden & chicken is thoroughly cooked.
Then, the potatoes:
1. Peel sweet potatoes.
2. Boil sweet potatoes until softened.
3. Mash sweet potatoes
4. Add any spices or garnish. Don’t forget to track on MyFitnessPal.
Lastly, the asparagus:
1. Steam until asparagus turns bright green & reaches desired texture.
2. Plate your chicken, potatoes, & asparagus.
3. Top asparagus with sliced, warmed tomatoes. Enjoy!
